Eggs in a Train

I actually found this recipe in a book and modified it for my children. We have a train cookie cutter, so we use that and call it “Eggs in a Train.” It’s actually rather good, although I prefer to make “French Toast Eggs in a Train” so the bread isn’t as dry when eating.

Ingredients:

  • 1 egg per serving/person
  • 1 piece of bread per serving/person

Preparation:

  1. Use your cookie cutter to cut out the shape from the bread
  2. Place on griddle
  3. Crack an egg and dump it into the hole in the bread
  4. Cook as desired, flipping as desired – depending on how “done” you want your egg

French Toast Eggs in a Train:

  1. Make your French Toast batter
  2. Use your cookie cutter to cut out the shape from the bread
  3. Dip bread in the batter and place on griddle
  4. Crack an egg and dump it into the hole in the bread
  5. Cook as desired, flipping as desired – depending on how “done” you want your egg

Is it healthy? It’s an egg and a slice of bread. Serve with whatever you want and call it good. A great breakfast, even on hectic mornings when the children are slow to wake up.
