Pumpkin Bread

With the abundance of pumpkin we had available, we tried out a few different recipes. Pumpkin bread was another and we loved it! This recipe makes two loaves of pumpkin bread.


  • 3 cups Splenda Sugar
  • 4 eggs
  • 2 cups pumpkin
  • 1 cup oil
  • 3 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp cloves
  • Nuts and/or Raisins optional


  1. Preheat oven to 375 degrees Fahrenheit
  2. Mix the dry ingredients in one bowl, mix the wet in another. Combine and mix well
  3. Pour into 2 prepared loaf pans
  4. Bake for one hour or until toothpick comes out clean
